Pumpkin Puree Muffins with Pepitas

Don't know what to do with leftover pumpkin puree? Muffins!!!

(yields 3 muffins)

1/2 tsp baking powder
1 tsp pumpkin pie spice
4 TBS pumpkin puree
2 TBS maple syrup
2 TBS coconut sugar
1 ½ TBS non-dairy milk
6 TBS gluten-free all purpose flour mix
Pepitas, to garnish


1. Preheat oven to 180˚C and grease 3 muffin cups.
2. In a small bowl, whisk dry ingredients together and then add wet ingredients. Stir until combined.
3. Spoon into muffin cup and garnish with pepitas.
4. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
