Vanilla Puffs

I LOVED THIS PICTURE SO MUCH!
I used potato + rice flours as the gluten-free flour combination for the puffs. They were super crunchy and absolutely delicious! You can add them to yogurts, ice creams, or whatever. I need to try their chocolate version, too!


Although the Food and Drug Administration recently published new figures on arsenic contamination and says consumers shouldn't freak out, I am limiting my rice intake to twice a week (including flours, cookies and any rice products).

Vanilla Puff Cereal Yogurt Beet Fudge Parfait

And that was some nice breakfast! I used Kefir instead of yogurt and the vanilla puffs, featured on this blog. This recipe takes beets to a whole new level. The twins Michelle and Lori at their best!

Lactose-free Coconut Mocha

What about something special for your mornings? I haven’t had a Mocha for AGES due to my (mostly) L-free lifestyle!



Tips:
‒ Use FULL-FAT coconut milk for a super creamy mocha (low fat coconut milk is crap, it tastes like dirty water).
‒ Next time I’ll make half of the recipe. 350 ml of coffee was way too much. I saved the rest for a couple of hours later and reheated in the microwave ‒ shame on me, I know!
‒ I always use maple syrup/coconut sugar in recipes that need heating. I’ve heard honey should always be taken raw (if you’re interested in the topic: http://www.mockingbirdmeadows.com/2013/11/19/reasons-you-should-never-cook-with-honey/).

Colorful Pasta with Cashew Vegan Mayo

It was suppose to serve 2, but I ate it all... With an incredibly delicious vegan mayo; super refreshing and made with cashews, the "good for everything" ingredient of vegan foods.



I used dehydrated peppers, olives, carrots, lettuce and served with gluten-free pasta. Personal note on the mayo recipe: I cheated... used 100% cashew butter instead of having to work on the raw cashews hehe.

Halloumi Cheese Sandwich

There's nothing like a healthy and crunchy snack in front of the TV! Sweet potatoes dehydrated with curry at 37ºC for 6 hours.

Five Minute Avocado Chocolate Pudding

Gluten-free, sugar-free (you can always use maple syrup or any other calorie-free sweetener of choice), with good-old-man Avocado.


I was in a hurry and had no intention of making a huge amount of sweets. I'm actually craving much more for salty foods these days... but, there you go, a tasty & quick recipe for one!

TIPS:
1 - Add some vanilla drops!
2 - I used coconut milk instead of normal milk, but this is up to you.

Homemade Sugar-free White Chocolate

(Can be lactose-free and vegan also if you have soy or ricemilk powder at hand)

White chocolate was my favourite when I was a kid. Later I acknowledged that white chocolate is no chocolate at all :S

According to the FDA, to be called "chocolate", a product must contain chocolate liquor, and this little guy here is based on cocoa butter -- the fat from cocoa beans. But it's delicious and that's what's important! It’s so EASY and fast – it takes less than 3 minutes to get everything ready. I used Xylitol and also added a tiny half tsp of normal skim milk powder because that was what I could find in our supermarkets/bio shops around with no sugar added.

I tell you: why buy chocolate full of additives and bad sugar when you can make one at home that tastes EXACTLY the same?


Also perfect for any kind of icing.
