The veggies in this sandwich make it so colorful! The pumpkin seeds add an extra nutty flavor and are a super healthy bonus.My twist:
Cashew cheese: added 1 tsp lemon juice and 2 TBS Nutritional Yeast.
Marinated salad: no onions used (hate eating onioions at night).
